Ingredients:
- 1 cup creamy peanut butter
- 1/2 cup brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon ground ginger
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chocolate chips optional
Instructions:
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
In a mixing bowl, combine the peanut butter, brown sugar, egg, and vanilla extract
Mix well until smooth and creamy
Add the ground ginger, baking soda, and salt to the peanut butter mixture
Mix until all ingredients are fully incorporated
If desired, fold in the chocolate chips to the cookie dough
Scoop tablespoon-sized portions of dough and roll them into balls
Place the dough balls onto the prepared baking sheet, leaving some space between each cookie
Gently press down on each cookie ball with a fork, creating a crisscross pattern
Bake in the preheated oven for 10-12 minutes, or until the cookies are lightly golden around the edges
Remove the baking sheet from the oven and allow the cookies to cool on the sheet for a few minutes before transferring them to a wire rack to cool completely
Once cooled, enjoy these delicious flourless peanut butter ginger cookies!
