These vegan blueberry hemp muffins are not only delicious but also packed with nutrients. Hemp seeds add a nutty flavor and extra protein, making these muffins a wholesome treat for any time of day.
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup hemp seeds
- 1/2 cup rolled oats
- 1/2 cup coconut sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup non-dairy milk such as almond or soy milk
- 1/4 cup coconut oil melted
- 1 tsp vanilla extract
- 1 cup fresh blueberries
Instructions:
Warm the oven up to 375F 190C, and grease or line a muffin tin with paper liners
Mix the flour, oats, coconut sugar, baking powder, baking soda, and salt in a large bowl
In a different bowl, mix non-dairy milk, melted coconut oil, and vanilla extract with a whisk
Mix the dry and wet ingredients together until they are just barely mixed
Fold the blueberries in slowly
Spread the batter out evenly in the muffin tins
Put it in the oven and bake for 20 to 25 minutes, or until a toothpick stuck in the middle comes out clean
Take the pan out of the oven and let it cool for 5 minutes in it before moving it to a wire rack to cool all the way through
