Coconut Sugar Cookies



These Coconut Sugar Cookies are a delightful treat that bring a tropical twist to the classic sugar cookies. Made with coconut oil, coconut sugar, and shredded coconut, they have a wonderful coconut flavor in every bite. Plus, they are free from refined sugar, making them a healthier option for your cookie cravings.

Ingredients:

  • 1 cup coconut oil
  • 1 cup coconut sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup shredded coconut unsweetened

Instructions:

Warm your oven up to 350F 175C and put parchment paper on a baking sheet

Cream the coconut oil and coconut sugar together in a large bowl until they are well mixed

You need to beat the egg and vanilla extract into the mix until it is smooth

Mix the all-purpose flour, baking soda, and salt together in a different bowl

Add the dry ingredients to the wet ones one at a time and mix them together until a dough forms

Add the shredded coconut and mix it into the dough until it's spread out evenly

Roll the dough into small balls with your hands and place them on the baking sheet that has been prepared

Make each ball a little flatter with the back of a fork

After the oven is hot, bake the cookies for 10 to 12 minutes, or until the edges are golden brown

After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet

Then, move them to a wire rack to cool all the way down

After the cookies have cooled, put them in a container that won't let air in
