Ingredients:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup unsweetened almond milk
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 1/4 cup rainbow sprinkles
Instructions:
Preheat oven to 350F 175C
Grease and flour a 9-inch round cake pan
In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt
In a separate bowl, mix almond milk, vegetable oil, and vanilla extract
Gradually add wet ingredients to dry ingredients, mixing until just combined
Be careful not to overmix
Fold in rainbow sprinkles gently
Pour batter into prepared cake pan and smooth the top with a spatula
Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean
Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely
Once cooled, decorate with vegan frosting and additional sprinkles, if desired
