Lightened-Up Banana Muffins



These Lightened-Up Banana Muffins are a tasty old favorite made in a healthier way. They are soft and naturally sweetened with honey or maple syrup. You can add nuts or dark chocolate chips to make them your own.

Ingredients:

  • 2 ripe bananas, mashed
  • 1/3 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/4 cup Greek yogurt
  • 1/2 cup chopped walnuts optional
  • 1/2 cup dark chocolate chips optional

Instructions:

Preheat your oven to 350F 175C and line a muffin tin with paper liners

In a mixing bowl, combine the mashed bananas, applesauce, honey or maple syrup, egg, and vanilla extract

In another bowl, whisk together the whole wheat flour, baking soda, baking powder, salt, and ground cinnamon

Add the dry ingredients to the wet ingredients and mix until just combined

Fold in the Greek yogurt, and if desired, add chopped walnuts or dark chocolate chips

Spoon the batter into the muffin liners, filling each about 2/3 full

Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean

Remove the muffins from the oven and let them cool in the tin for a few minutes before transferring to a wire rack to cool completely
